Sarlat Potatoes

Ingredients (for 5 people):

- 1 kg firm potatoes
- 2 soup spoons goose or duck fat
- 250 g cèpe mushrooms
- garlic
- parsley
- salt and pepper


Preparation

1. Wash and peel the potatoes and chop them into pieces. Boil in salted water for 15 minutes. Strain.

2. In a thick-bottomed pot, heat the goose fat. Fry the chopped cèpe mushrooms. Add the chopped garlic and also the potatoes at the same time. Leave to brown. Add salt and pepper.

3. Continue to cook for 10 more minutes over a gentle heat with the lid on.
