Ingredients (for 1 serving):
- 2 preserved duck gizzards
- duck fat
- mixed green salad
- 1 tomato
- 4 slices of smoked duck breast
- pine kernels and walnuts
- 1 or 2 slices of duck foie gras
- vinaigrette dressing
1. In a frying pan, heat the gizzards gently in the duck fat.
2. Place a bed of green salad on a large plate along with the tomato cut
into fine slices.
3. Place the slices of smoked duck breast on the salad, along with pine
kernels and walnuts, and one or two slices of foie gras.
4. Add the warm gizzards cut into pieces.
5. Season. Serve immediately.
